E-mail: nass-ny@nass.usda.gov (518) 457-5570 FOR IMMEDIATE RELEASE: Contact: Joseph Morse Thursday, April 28, 2011 www.nass.usda.gov/ny NEW YORK CHEESE PRODUCTION INCREASES Total cheese production in New York, excluding cottage cheese, totaled 743 million pounds in 2010 according to King Whetstone, Director of USDA’s National Agricultural Statistics Service, New York Field office. This is a 1.9 percent increase from the previous year. Italian cheese, which accounted for 51 percent of New York’s total cheese output, at 367 million pounds, was down 3.6 percent. Total cottage cheese production at 303 million pounds was down 2 percent from 2009. Total U.S. cheese production, excluding cottage cheeses, was 10.4 billion pounds, 3.6 percent above 2009 production. Wisconsin was the leading State with 25.0 percent of the production. Italian varieties, with 4.42 billion pounds were 5.8 percent above 2009 production and accounted for 42.4 percent of total cheese in 2010. Mozzarella accounted for 78.9 percent of the Italian production followed by Provolone with 8.0 percent and Ricotta with 5.9 percent. California was the leading State in Italian cheese production with 31.1 percent of the production. American type cheese production was 4.28 billion pounds, 1.7 percent above 2009 and accounted for 41.0 percent of total cheese in 2010.
