NEW YORK TROUT SALES INCREASE
New York trout producers sold a total of 132,000 pounds of trout valued at $507,000 during the 12 months ending December 31, 2005. This production, which includes food-size fish, stockers, and fingerlings, was up 4 percent from a year ago.
The 2005 output included 83,000 pounds of food-size trout averaging $3.03 per pound in value, 46,000 pounds of stocker trout averaging $4.49 per pound, and 3,000 pounds of fingerlings averaging $445.00 per 1,000 fish.
Food-size fish averaged 1.0 pounds in weight, while stockers averaged .40 pounds. Total weight of food-size trout sold was down 5 percent from 2004. Total weight of stocker trout was up 21 percent.

Approximately 3 percent of New York’s food-size trout went to restaurants and other retailers. People engaged in fee fishing or recreational establishments accounted for 51 percent, while 39 percent was bought directly by consumers. Fee fishing and recreational establishments took 65 percent of the stocker trout sold during 2005, while other sales took 26 percent.
Pennsylvania trout sales for 2005 amounted to 1.515 million pounds, up 11 percent from 2004. Food-size trout sales of 1.32 million pounds were up 15 percent from last year, while stocker sales, at 190,000 pounds decreased 12 percent. Food-size trout in the Keystone State averaged $3.00 per pound, while stockers averaged $4.00 per pound.
Trout growers in the United States sold a total of 61.7 million pounds of trout valued at $69.1 million during 2005, compared with 59.9 million pounds of trout valued at $66.2 million a year earlier. Food-size fish accounted for 97 percent of the total pounds sold, with an average live weight of 1.10 pounds and an average value of $1.05 per pound. Stocker trout averaged .40 pounds live weight, with an average value of $2.82 per pound. U.S. growers sold 67 percent of their food-size trout to processors, while fee fishing and recreational establishments took 51 percent of the stocker trout.
