Milk Production

Milk production in Michigan during 1996 was 5,430 million pounds, down 2 percent from 1995. Michigan ranked 7th nationally in milk production in 1996, accounting for 3.5 percent of U.S. production.
The annual average number of milk cows on Michigan farms during 1996 was 320,000 head, down 6,000 head from last year. Number of operations with milk cows fell to 4,400 from 4,700 in 1995.
Production per cow was 16,969 pounds in 1996, compared with 17,071 pounds in 1995. Average butterfat content was 3.69%, compared with 3.66% in 1995. Ninety-nine percent of production was grade A.
Milk prices during the year averaged $15.00 per cwt., up $2.00 from the previous year.
Cash receipts from milk sales totaled $807 million, up 12 percent from 1995. Milk continued as the number one ranked Michigan commodity in cash receipts.

Dairy Products

Michigan dairy plants produced 22.1 million pounds of butter in 1996, up 4 percent from 1995. Michigan ranked 7th among states in butter output in 1996.

Michigan produced 15.7 million pounds of creamed cottage cheese and 4.5 million pounds of lowfat cottage cheese. Total cheese production (excluding cottage cheese) totaled 107 million pounds, down 4 million pounds from a year ago.

Dry buttermilk production rose 7 percent in 1996 to 2.22 million pounds, but dry skim milk for animal feed output fell 35 percent to 325,000 pounds. Production of non-fat dry milk for human food dropped 19 percent to 29.4 million pounds while unsweetened condensed skim milk slipped 9 percent from 1995 to 53.3 million pounds.

The annual ice cream production in Michigan was 29.3 million gallons, compared with 27.9 million gallons for 1995. Michigan ranked 8th in total ice cream production for 1996.
